Air Fryers, such as the Nuwave Brio 7 have recently become the number #1 go-to kitchen appliance for making just about anything. Try this recipe for the most AMAZING easy and delicious roast potatoes. Doing then this way, trust me, you’ll never go back.
Ingredients:
Any roasting type potatoes. Marist Piper are especially great. Skin on/off.
How many? As many as can fit in your air fryer.
Method:
Boil / microwave until just soft. Place side by side in a the air fryer tray and gently squash them with the base of a cup until they kinda ‘squash’ a little flat. Don’t overdo this as they will become mash!
Hit them with some sea salt, Celtic Sea Salt is the best, and pepper, garlic flakes and rosemary, a sprinkle of Extra Virgin Olive Oil, and set your Nuwave Brio 7 to the ‘Roasting’ function. Making flour Tortilla’s is so easy, and they are a staple in my household. You’ll need a a mixing bowl and a electric Kitchen Aid is handy by optional. if you do use a Kitchen Aid or any such mixer, I always get annoyed at the chord hanging loose and getting in the way. For this reason I recommend these fantastic little Chord Organizers for any kitchen appliance (they are in a pack of 9). Especially when it’s not in use. I also like these measuring Magnetic Measuring Spoons. (In a handy set of 7 spoons). these take just a few minutes to make.
Ingredients: (makes 8-16 depending on size)
3 cups pain flour
1 teaspoon salt
1 teaspoon baking powder
1/3 cup neutral oil
1 cup warm (not hot) water
Method:
Mix dry ingredients and add wet, mix in your electric mixer or by hand and knead for 15 minutes.
Form a ball and allow it to rest in a covered bowl for about 1 hour.
Remove from bowl and knead again for 5 minutes.
Roll into a long sausage and cut even chunks (8-16 depending on size preference).
I like to work on this Non-Stick Pastry Mat no mess no fuss.
Use a pasty roller to roll out a 3mm thickness, and use a plate to cut the circle in the dough. make sure to reuse the offcuts.
Finish off with the Mini T-Shape Pastry Roller for a nice even finish.
Add a teaspoon of cooking oil, I like to use olive / rice bran oil, to your medium heat pan. Pan fry until bubbles begin to appear on the surface and then flip. They should be just lightly golden.
Add any toppings of your choice – shredded chicken, avocado, lettuce, toasted sesame seeds, and sauce, and shove it in your mouth. Delicious!

Paying so much for Oat Milk in a store is ridiculous, when you can make it yourself for less than 50c for half to 1 litre. It refrigerates for up to 5 days in a sealed container, and you know exactly what’s in it! An it take under 2 minutes to make.
Ingredients: (for half litre – simply double if needed)
500ml water
Half cup regular oats (quick / shredded is best)
1 table spoon neutral oil. I use Rice Bran oil / Avocado.
1 table spoon maple syrup (for taste – you can add less or non)
Pinch of salt
Half teaspoon vanilla essence
Method:
Add all ingredients into a good blender. Any blender will do, although I use the Maizoon Blending Cup, it’s rechargeable! Or you can use a stick blender such as the NutriBullet Immersion Blender.
Blend for about 30 seconds. Pour contents slowly into a mesh bag or into a muslin cloth or fine sieve to strain it. You can squeeze the excess with the back of a spoon. Use the remaining pulp for backing muffins or making porridge. It can be frozen and used later too.
Store the liquid in a sealed jar in the fridge for up to 5-6 days. Give it a good shake before pouring.
Use this Oat Milk in Coffee, cold drinks, breakfast cereal. It also froths well using the Froth Blast Milk Frother.

Who doesn’t like a delicious Butter Chicken on a cold or warm day. It’s real comfort food. This is my simple recipe that serves 4 with leftovers.
Ingredients:
2 x chicken breast skin off cut into your preferred sized chunks about 2×2 cm. (Use the Carla Home Large Bamboo Cutting Board)
1 x 400g can coconut cream
1 x 400g can crushed tomatoes
1 table spoon tomato paste
1 x can 400g chickpeas (optional)
1 x brown / red onion finely diced (Use the Fullstar All-in-1 vegetable Chopper)
2 cloves garlic finely diced/crushed (Use the Joseph CleanForce Garlic Press)
Spices: 1 tsp ground cumin, 2 tsp sweet paprika, 1 tsp garam masala, 1/4 tsp Chinese 5 spice, 1 tsp curry powder, 1/4 tsp cayenne pepper (optional for heat)
1 cup fresh spinach leaves
Method:
In a separate bowl, cut the chicken into small cubes whatever size you prefer. Use the Carla Home Large Bamboo Cutting Board for a no mess, no fuss easy clean. Season chicken with salt, pepper, and half of all the spices, mix and set aside to rest for 20 minutes.
It’s quick to make this in a Ninja FD401 Foodi 12-in-1 Deluxe XL 8 qt. Pressure Cooker, but a regular sturdy pot with lid will also work fine. Meanwhile sauté the onions and add the remainder spices in, with garlic towards the end to bring out the flavor. Remove from heat after 1-2 minutes. In the same pan, heat and add chicken pieces to brown, stirring occasionally. Then add back onion mix, open your cans with the Kitchen Mama automatic can opener. Add your crushed tomatoes, tomato paste, chickpeas (optional) and coconut cream. Mix well and allow to cook on low heat for 15-20 minutes stirring occasionally. (During this time you might want to make my easy Cheesy Garlic Naan bread, see recipe below). Also, you might want to get 3 cups of rice on the go. with this recipe, your home will smell amazing as these middle eastern flavors waft through. After turning off the heat, add your 1 cup of fresh spinach leaves and mix in. Serve with Cheesy Garlic Naan Bread and/or white rice.
(Be safe don’t cross contaminate. Clean up after cutting chicken with a good counter spray and use a paper towel with an OXO SimplyTear Paper Towel Holder.)
